I have all kinds of decorating projects and ideas happening around the house right now, but I wanted to kick off the year with something I’m sure we could all really use… January’s (healthy) Meal Plan. After the holidays and all the extra treats, this month always feels like a good time to get our eating back to normal, incorporate more veggies/less cookies, and work towards some health goals for the new year.
I decided to join a health/fitness challenge this month (it’s through Madeline Moves, if you’re interested), and I can say with 100% certainty that if I didn’t create a meal plan and a strategy for the next 30 days, I would never make it. I thought I would share with you some of my personal favorite healthy recipes along with some new ones I’m excited to try this month. I broke it down into 4 meal ideas per week – I always account for having leftovers some days and also having a little bit of flexibility in case we decide to go out for dinner one night.
