My husband is the griller in our house. Always has been and most likely always will be. Not because I don’t want to learn how to use the grill or because I’m opposed to standing next to a smoky, red-hot fire while singeing off my arm hair… okay that part may be true. But mostly because my husband insists on having a charcoal grill that is so large it could probably cook an entire hog all at once if necessary. It’s a “real man’s grill”, he tells me.

And I get it, charcoal does make food SO much more flavorful. But I’m not going to go start up my husband’s gigantic charcoal grill just to cook a few hot dogs when the mood strikes. I’m way too lazy for that. If I can’t turn a little knob and have an instant fire ready cook my little hot dogs, I’m not going to bother with the grill at all. I’ll leave it to the “real man” in the house.

But on those nights when he’s working late at the farm and I have a major hankering for some phenomenal grilled food, this is the recipe I turn to: Easy Oven Baked Barbecue Chicken. The most tender, tangy barbecue chicken legs made the easy way in the oven!

So whether your grilling plans are on a rain delay, grilling season is over for the year, or you just prefer to steer clear of grilling duties, I know you’re going to love this recipe. Most of the time, I keep things really easy by using a good quality store-bought barbecue sauce rather than making my own from scratch, but feel free to go whichever route you want.  Also, my family likes legs, but you could also use chicken thighs or a whole cut-up chicken, depending on what your family prefers. Just adjust the cooking time accordingly.

Serves: 4-6
INGREDIENTS
  • 3-3½ pounds chicken legs
  • 2 cups barbecue sauce
  • garlic powder
  • seasoned salt
  • salt and pepper
INSTRUCTIONS
  1. Preheat oven to 350ºF. Pat chicken dry with paper towels and season all sides with garlic powder, seasoned salt, salt and pepper. Place chicken on a rack set inside a baking sheet or jelly roll pan and cover tightly with foil. Bake on lower oven rack for 45 minutes.
  2. Remove chicken from oven and discard foil. Brush all sides thoroughly with barbecue sauce and bake uncovered for another 30 minutes. Turn the temperature up to 450ºF and cook for 5 more minutes until the chicken is cooked through and tender. Serve with creamy coleslaw, smashed potatoes, or baked steak fries.
NOTES
- I keep this recipe easy by using a good store-bought barbecue sauce, but feel free to use your favorite homemade recipe if you like.

- My family likes chicken legs, but you can use whatever cuts your family prefers. Just adjust the cooking time accordingly.
