Guys… I’m obsessed with this salad. Like, I’ve actually eaten salad for lunch almost four times this week, obsessed. Normally I’m a side salad kind of girl… eating bunny food as a main dish doesn’t usually satisfy my carnivorous taste buds, so it usually just ends up as little greenery on the side of my plate. But THIS salad is anything BUT a boring side salad.

It’s filled with the best flavors of summer… fresh, sweet, juicy, ripe peaches and strawberries, plus cool cucumber, creamy goat cheese, crunchy almonds, and a honey balsamic dressing that will knock your socks off. So much flavor, so much texture… basically it’s a summertime party in your mouth! Oh yes, I just described salad as a party in your mouth. That’s just how GOOD this salad is!

This recipe is perfect while peaches and strawberries are in season, but feel free to sub in other fruits too… blueberries, watermelon, oranges, cantaloupe… they would all be great options! I’m normally not a huge fan of balsamic dressings, but this one has just the right amount of sweetness to curb the flavor of the vinegar, and it’s super easy to make. Just 3 ingredients (plus a little salt and pepper)! You can reduce this recipe to just make a salad for yourself for lunch or make the full recipe to serve guests at a dinner party, but either way, promise me you’ll try this awesome strawberry peach salad this summer!

Strawberry Peach Salad

Serves: 4-6
INGREDIENTS
  • 8 cups mixed greens
  • 2 fresh peaches, sliced
  • 12 strawberries, sliced
  • ½ large cucumber, sliced
  • ½ cup goat cheese
  • ½ cup sliced almonds

  • Dressing:
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • pinch of salt and pepper
INSTRUCTIONS
  1. Place greens in a large bowl and top with peaches, strawberries, cucumber, goat cheese, and almonds. Whisk the dressing ingredients together in a small bowl (or shake them in a mason jar) and pour over the salad when ready to serve.

    I love BACON on my salad!! I also love mandarine oranges, almonds, cranberries, tomatoes, eggs…..I could go on and on! It really depends on the salad. This one looks amazing! Adding it to my list!

    If I am honest, I’ve never tried to mix vegetables and fruits not only in a salad but in any dish. This one looks like a good start for me. I think I will like the taste, especially if I manage to make it as good looking as yours.
