Apple Turnovers

Decorating our home and sharing that journey with you is one of my absolute favorite things to write about on the blog, but I still enjoy cooking and baking so much and miss coming up with recipes that my family loves and I think you will love as well. This year I’ve made it a goal to share more recipe posts on the blog again because as much as we adore looking at pretty spaces, we all have to cook for our families everyday, and I want to start sharing more of my favorite yummy recipes to make your job a little bit easier!

I’ve been going back through some of my earliest posts from over five years ago and decided to bring back some recipes that deserve a little extra spotlight since they were so good the first time around, and I only had about three followers back then to see the recipe originally… lol! These apple turnovers are the tastiest little pastries that are perfect for a sweet breakfast or even dessert. I use frozen puff pastry sheets to make them quickly and easily, and the homemade apple cinnamon filling is absolutely to die for. They bake up nice and puffy and golden in the oven and get a drizzle of vanilla glaze over the top for a little extra sweetness. I think you are going to love these!

Triple Berry Baked Oatmeal

Wake up to a bowl of this warm and delicious Triple Berry Baked Oatmeal for breakfast! It is easy to put together, can serve a crowd, and reheats beautifully!

We are now on day 16 of our kitchen renovation, and as excited as I am to see all the changes happening to our little farmhouse kitchen, I am NOT so crazy about living without a kitchen for 3 or 4 weeks. We were able to put our refrigerator in the living room (which is actually highly convenient but pretty ugly to look at), but other than that, all we have is a tiny table in my office with a microwave and a coffee pot. I don’t think I could survive this reno without my morning cup of caffeine, so the coffee pot heading down to the basement for a month was NOT happening.

We’re all growing pretty tired of eating bowls of cereal for breakfast every morning, but luckily I was smart enough to make a big batch of this Triple Berry Baked Oatmeal before our kitchen demo started! This is why I love baked oatmeal so much… you can whip up a batch on the weekend and have a hearty, homemade breakfast all week long. Just store leftovers in the fridge and reheat when you need it! I’ve shared a few of my favorite baked oatmeals here on the blog before… apple cinnamon, banana bread, cinnamon roll, and blueberry lemon, to name a few. I think you guys are going to love this wholesome, fruit-filled, warm and satisfying oatmeal recipe!

P.S. You can use fresh or frozen berries for this recipe, but I like to pick up a bag of frozen mixed berries from the store to save a little time and money. Also, as the berries bake and release their juices, the oatmeal will still look a little runny at the end of the cook time, but it will set up more once it cools for a few minutes!

Alright, I know I’m the last person on the planet to jump on the whole “breakfast bowl” train, but… better late than never, right? I’ve always sipped my smoothies out of a boring, old cup until the last year when I started seeing everyone with these beautiful bowls full of smoothie + topping yumminess. I wondered what all the fuss was about, but now… NOW I get it.

I love whipping up a quick smoothie for breakfast or even for lunch when I’m swamped with work, but sometimes I just need to CHEW something. Something with texture. Something with crunch. That’s when a breakfast bowl comes in handy… it’s the same nutritious, delicious smoothie you’ve always had, just poured into big bowl, topped with whatever yummy toppings your little heart desires, and eaten with a spoon. Yay!

In honor of the beautiful fall weather we’re having here in Indiana this week, I’m making my first breakfast bowl on the blog a pumpkin-flavored one. A simple, healthy, pumpkin pie-inspired smoothie with homemade pumpkin spice granola. Okay… that’s actually TWO firsts for today. This is the first time I’ve made granola at home, and oh my gosh… why did I try this sooner? Super easy, way more delicious than the stuff you buy at the store, and you can customize it with whatever flavors you like. You can bet there will be a giant container of homemade granola sitting in my pantry at ALL times now. It’s so delish!

Cinnamon and Sugar Pumpkin Muffins

After last week’s salted caramel apple crisp recipe, all I can think about is dessert. If it has pumpkin, cinnamon, caramel, or apple in the name, I’m ALL about it right now. Maybe it’s the leaves starting to fall from the trees… maybe it’s the tractors in the fields all around us… or maybe it’s waking up to open windows on a chilly morning… either way, I’m feeling all the fall feelings and loving it.

I baked some pumpkin muffins last weekend before the boys had their football games, and they INHALED them. One minute there was a pile of muffins on the plate, and the next minute there were only crumbs and two grinning boys with sugar-covered faces. I took that as a good sign.

These muffins are tender and fluffy with just the right amount of pumpkin and warm cinnamon. They bake up nice and big and then get a crunchy cinnamon sugar coating that takes them from seriously delicious to insanely addicting. You NEED these muffins in your life this fall!

The recipe is pretty simple and straightforward, but I will say that these are best eaten right after baking while the inside is still a little warm and the sugar is still nice and crunchy on the outside. I hope you enjoy them as much as we do!

I’ve been hoarding this recipe all summer, and it feels sooooo good to finally get it out! I started making these super easy baked oatmeals earlier this year and pretty much became obsessed with them. First of all, oatmeal is just plain yummy. It’s warm and comforting and full of hearty goodness. It’s like waking up to a big hug in a bowl. And this baked oatmeal reheat beautifully, so if you make a pan of it over the weekend, you can have a good, healthy breakfast all week long. Total no-brainer, right?

The best thing about oatmeal is that it’s the perfect blank canvas to add all kinds of awesome flavors. Earlier this year, I shared a classic Apple Cinnamon Oatmeal, then a citrusy Blueberry Lemon Oatmeal, followed by a decadent Cinnamon Roll Oatmeal that is to. die. for. I also had this banana bread oatmeal recipe up my sleeve, but figured I’d save it for back-to-school time when all you mommas out there need an easy breakfast idea that will fuel the kiddos while they sit in class for seven hours straight.

I wanted this oatmeal to taste like biting into a warm slice of banana bread, so I added a full cup of mashed bananas, plenty of cinnamon and nutmeg, and toasted chopped walnuts sprinkled on top. Mmm mmm… this stuff is good! This recipe feeds about six hungry mouths, but if you don’t eat it all at once, just pop it in the fridge and then microwave the next day. You can pour some milk in the oatmeal if it seems a little dry when reheating. Hope you enjoy as much as we do!
