Well, hello LGW friends! Krista here from Joyful Healthy Eats! I am uber excited {fist pumping and happy dance included} to be sharing an easy healthy recipe with you today!

Have you heard of this chia seed fad going on right now? If you haven’t just take a little cyber stroll through Pinterest and you are sure to find something using it.

Now, before your mind goes the route of the chia seed pet that you water and puffs up into some grass poodle, let me explain to you what chia seeds actually are.

Chia Seeds come from a desert plant and are part of the mint family. They are a great source of omega 3, helpful in reducing blood pressure, contain a good amount of fiber, protein, and calcium, and can assist in getting you “full” faster. They are a great “add in” ingredient, kinda like flax seed to give you an extra boost of nutrients.

They look like poppyseeds so I thought why not add them to some lemon poppyseed bread and give a little boost of nutrients to a yummy breakfast bread favorite.

This Lemon Poppyseed Bread is not only packed with nutrient goodness from the chia seeds, but is made with white whole wheat flour, coconut oil, greek yogurt, and natural sugar cane to make this a guilt free option for breakfast. It would even be perfect for an after workout pick me up.

Lemony, moist and naturally sweet Whole Wheat Lemon Poppyseed Bread with an extra boost of nutrients from organic chia seeds.

Recipe type: Breakfast
Serves: 12 pieces
INGREDIENTS
  • 2 cups of white whole wheat flour
  • ½ cup of natural cane sugar
  • ½ teaspoon of baking soda
  • 1½ tablespoons of poppyseed
  • 1 teaspoon of chia seed
  • ¾ cup of coconut oil, melted
  • 1 cup of vanilla greek yogurt
  • 1 tablespoon of vanilla extract
  • ¼ teaspoon of salt
  • 2 eggs
  • 1 teaspoon of lemon zest
  • 4 tablespoons of lemon juice
INSTRUCTIONS
  1. Preheat oven to 375ยบ.
  2. Grease a loaf pan with coconut oil.
  3. In a large bowl mix, white whole wheat flour, natural cane sugar, baking soda, lemon zest, salt, poppyseeds, and chia seeds. Whisk together.
  4. In a small bowl mix melted coconut oil, vanilla greek yogurt, vanilla extract, fresh lemon juice, and eggs. Whisk together.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Add batter to prepared loaf pan.
  7. Bake for 40 minutes or until toothpick comes out clean.

    I’m stopping over from Buns in my Oven. This is such a GREAT idea! It makes total sense, and I have a bag of chia seeds in my freezer from Trader Joe’s. I sometimes will put them in a smoothie, but I hadn’t really had another use for them until now. Thanks for sharing this recipe. Pinned!

    Thanks for the recipe, I’ve just made it and it is a very nice, light loaf!
    Is there a special reason that you don’t use baking powder in this recipe? I did use it, and it turned out okay. I was just wondering though.
    I replaced half of the oil with apple sauce and it was still delicious. A small recommendation if you are trying to lower your saturated fat intake!

    Ok. This bothers me. Poppy seeds have MORE of almost all vitamins and minerals as well as protein than chia seeds. Don’t add chia seeds to poppy recipes, add poppys to chia recipes!!! So much cheaper and HEALTHIER.
