Classic Chicken Salad Wraps

Chicken salad is a great go-to meal during Summer for three reasons: it requires little to no cooking, you can make it ahead of time, and it is so cool and refreshing to enjoy on a hot Summer day! Everyone has their own version, and today I’m sharing my perfect, classic Chicken Salad Wraps!

Chicken salad is one of those recipes that everyone has their own version of. After polling my Facebook followers, I learned some of the many ways you all like your chicken salad: with pesto, curry, avocados, strawberries, cashews, pineapple, hummus, goat cheese, mandarin oranges, boiled eggs, water chestnuts, olives… the list goes on! You all are such awesome, creative chefs! So today I thought I’d share with you MY recipe for classic chicken salad, which in my humble opinion, is the best  : ) It has all the basic components of chicken salad plus a little extra flavor from lemon juice and fresh dill. YUM!

Chicken salad is the perfect recipe to make this time of year. I like to pick up a rotisserie chicken from the store so I have zero amount of cooking to do for this meal. No turning on the oven during Summer = one happy Momma! I just shred up the chicken, mix in all the other ingredients, and let it chill until we’re ready to eat. It’s a great make-ahead meal for weekends and great for brunches too. You can put it on a fancy bakery croissant for company or make a simple wrap like I did. During the dog days of Summer, it’s so nice to have a delicious, cold salad all ready to go when hunger strikes! And this chicken salad is DEFINITELY delicious! It has an incredible variety of flavors and textures, and each ingredient brings something different to the party… The celery adds great crunch, while the red grapes bring the perfect amount of sweetness. Pecans are a must in my chicken salad, and I like to add a squeeze of fresh lemon juice and some fresh dill to really brighten and liven up the recipe! I only use Hellmann’s mayonnaise, and I like my chicken salad on the drier side. Feel free to add more mayo, lemon juice, salt, pepper, or whatever you desire to your salad. That’s the beauty of it! Taste the food as you go, and make it according to your own taste buds. I’m just giving you a delicious starting point to create your own perfect chicken salad : )

Classic Chicken Salad Wraps
2 cups cooked, shredded chicken
1 cup chopped celery (about 2 stalks)
1 cup halved red grapes
1 green onion, thinly sliced
1/2 cup pecan halves, roughly chopped
1/2 – 3/4 cup mayonnaise (I use Hellmann’s) 
2 tablespoons fresh dill, finely chopped
1/2 teaspoon black pepper
1/2 teaspoon salt
juice of 1/2 a lemon
4 tortillas
Place the chicken, celery, grapes, green onion, and pecans in a large bowl and stir to combine. In another bowl combine 1/2 cup of mayonnaise with the dill, black pepper, salt, and lemon juice. Pour the dressing over the chicken mixture and stir until coated. Give yourself a little taste and add more salt, pepper, and/or lemon juice as you please. You can also add another 1/4 cup of mayonnaise if you like your chicken salad to be thinner. Cover and refrigerate for at least a few hours or up to overnight to allow the flavors to combine, and serve wrapped inside tortillas. 
Notes: Save a step by picking up a rotisserie chicken from the store and shredding it up. The rotisserie chicken adds great flavor to the salad!

    This is my absolute favorite way to make chicken salad too! Love the crunch of the pecans and grapes with the fresh dill flavor. Just don’t go looking for it on my blog…the pics are horrible ๐Ÿ˜‰

    This is almost exactly how I make chicken salad Liz and I just LOVE it! Sometimes I do wraps and sometimes I just like it with some wheat thins. Love all the incredible flavors and textures here!

    This is wonderful. My husband loves it and he makes sandwiches with it for lunch. Don’t skip letting it refrigerate a minimum of a couple hours. Delicious! Make it ๐Ÿ™‚

    Sooooo good! I used vegan mayo since my son’s allergic to eggs, and it’s delicious! I added romaine before I wrapped it in a tortilla and can’t get enough. Perfect for summer days.
