Nothing compares to the fresh flavor of homemade food, and this recipe for Roasted Strawberry Topping is no exception! I love adding strawberry syrup to my ice cream, and now I can enjoy homemade strawberry topping made right in my own kitchen with only 2 ingredients! These roasted strawberries are perfect with ice cream, as well as pancakes, waffles, crepes, yogurt, biscuits, angel food cake and more! This is also a great way to use those overripe berries sitting in your refrigerator!
I’m a mom of two boys, and as a parent, it’s my job to teach my children all the many lessons that will help them develop into a successful, happy adult one day. For instance, I always try to show them the importance of manners, especially at the table. Don’t talk with food in your mouth, take your hat off, use your napkin, blah, blah, blah. See, when I was a little girl my mother and grandmother enrolled me in manners school… No I’m not Southern, and no it was definitely not normal in the town I grew up in. But nonetheless, I went to manners school and learned how to cut my food, write a proper thank you note, and most importantly, how to sit in a dress. This was very pressing stuff for a 7 year old. Even though I probably thought it was absolutely ridiculous at the time, those lessons have stuck with me and helped shape the woman I am today. I mean, where would I be in life without knowing the correct way to cut a piece of meat? … just kidding.
So anyway, there are certain lessons that are very important for me to teach my boys as they grow up, and one lesson in particular that I cherish is teaching my boys about food. Teaching them that chicken nuggets and french fries is NOT a food group. Offering them a variety of different foods and pushing them to try new things. Showing them the importance of a home-cooked meal and learning to make things from scratch. Now trust me, there are many days that my boys would much rather eat a can of Spaghettio’s than try the roasted vegetables or shrimp skewers I made, but eventually the boys discovered the magic of making fresh, delicious food right in our own kitchen and now love cooking right along with me!
Which brings me to today’s incredible recipe… Roasted Strawberries. Let me say it again, Roasted Strawberries. I am seriously drooling just typing those words!
So are you asking the same question my kids asked? “Why on Earth would you roast strawberries??”
Well I’m glad you asked! Do you ever buy that yummy strawberry syrup that you can drizzle all over your ice cream? Well, this recipe makes HOMEMADE strawberry syrup with delicious roasted strawberries! You just cannot get the incredible fresh flavor of these strawberries out of a squeeze bottle, and I promise you will never buy it from the store again! Next time you find yourself with overripe strawberries, remember this recipe. This is the perfect way to use up those past-prime berries! These strawberries are divine on top of ice cream, as well as pancakes, waffles, crepes, and anything else you can think of!
This recipe is super simple and will leave your house smelling absolutely incredible! It starts with tossing a whole bunch of halved strawberries with honey and spreading them in a big baking dish.
The strawberries go into the oven set on low heat and cook for just shy of 2 hours. When the strawberries come out, they are the most gorgeous deep red color and are swimming in the thick syrup created from their juices. It’s seriously a sight you NEED to experience for yourself.
As the strawberries cool, the syrup becomes nice and thick until it is the perfect consistency for drizzling all over some delicious food.
These strawberries are out of this world paired with waffles, but during these hot Summer months, my favorite way to enjoy them is smothered all over some good vanilla ice cream. I load a couple scoops into a chilled dish and add plenty of the soft, sweet strawberries.
Then I drizzle a big spoonful of the strawberry syrup over the ice cream and dive right in. Quite frankly that syrup is so fresh and flavorful, I could probably just stick a straw right in and go to town! But then that darn manners school kicks in, and I remember that probably wouldn’t be very polite. But everyone gets a free pass every now and again right? Excuse me while I guzzle some strawberry syrup : )
Roasted Strawberry Topping
2 pounds strawberries
5 tablespoons honey
Preheat oven to 300 degrees. Wash and dry strawberries and remove the tops. Cut strawberries in half and place in a 9 x 13 baking dish in a single layer. Drizzle with honey and gently toss to coat. Bake until syrup begins to thicken and strawberries turn deep red, about 1 hour and 45 minutes. Let cool and serve over ice cream.
– Syrup will continue to thicken as berries cool
– Other serving ideas: Add strawberries to biscuits, pancakes, waffles, crepes, yogurt, or angel food cake.

I grilled strawberries last week just in their juices and I couldn’t believe the flavor from it. I can just imagine how much better these roasted strawberries are with honey in it is? Yum!! And your pics are awesome 🙂

Excuse her from the table and hold your ground she will NOT starve and she can be invited back IF she chews with her mouth shut it will take a bit of a toll on you and the rest of the family but it is so WORTH it, my parents but my brother at another table in the back room, mind you he is 63 now, but he still talks about it, and it worked. I just removed the kids to their own table and it took about a week they miss all the family planning and fun we had at the big table. RULES are RULES and that is why we have them to help shape our young…. Good luck and don’t forget you are the BOSS

I would store the strawberries refrigerated in an airtight container. Hope this helps!
