I’m always looking for recipes to give my family a delicious and healthy start to their day, and these Ham and Cheese Mini Breakfast Pies are one of our favorites! You can bake them ahead of time and freeze for whenever you need a quick breakfast. Just re-heat a few pies on busy mornings, and you have a good breakfast ready to go!

It’s back to school time! My oldest son started second grade this week, and my baby will begin preschool in 2 weeks. Even though I say I’m ready to have both kids in school, I know I will be a hysterical hot mess when I drop my little guy off that first day. He’s been my little buddy for so long! Wyatt is excited though, and I know he’ll be just fine. And I could really use some dedicated time to get work done. Have you seen the launch of my shop?? Having two in school now really makes our mornings pretty hectic, so I like to have easy breakfasts on hand to fuel my little learners for their day!

These mini breakfast pies taste like a delicious ham and cheese omelet wrapped in a sweet, flaky pie crust and can be baked ahead, frozen, and re-heated when needed! My whole family loves them, and I like to make a couple batches at a time so we have a good breakfast available even on days when time is short. They are the perfect size for little hands and a great on-the-go breakfast!

    These looked amazing but I wasn’t too excited about them because I have Celiac and have to eat gluten free…. but my mother in law told me today that she found tubs of gluten free refrigerated pie crust dough by Pillsbury! These are the first thing that came to my mind when she mentioned that ๐Ÿ™‚
