Hey everyone! My kiddos are officially on Spring Break, and I’m taking them on a mini vacation to spend some much-needed quality time together! This dear blog of mine takes up so many hours of my week, and my kids deserve some special time with their Momma!
Liz Fourez of Love Grows Wild
First we’re heading back to our home state of Illinois to visit my Mom and little sister, who just moved into a place of her own! I’m so proud of her and where she is at in her life, and I can’t wait to crash at her place for the weekend! She can cook and clean for me for once : )
My sister just recently discovered Pinterest and asked me to sew some new pillow covers for her. She said to check out her Pinterest boards to find things she likes, and I laughed hysterically as I scrolled through her boards! On almost everything she pinned she wrote,
“Liz, I want this.”
“Liz, make this one.”
“Liz, this one in white.”
“Liz, I love me some faux fur like this.”
So when Sissy asks, Sissy receives. If you follow me on Instagram, you’ve seen me fabric shopping and stenciling some adorable new pillow covers for her! They turned out so cute, I don’t want to give them away! I’m sure she’ll love them though, and I can’t wait to see them in her new house.
Easter morning we’ll wake up and head to my husband’s hometown, near Champaign, Illinois. After an Easter brunch with family, we’ll take the boys to an indoor water park in Indiana where I’m sure my little fishies will swim and play till they drop! I’m so excited to hang out with my boys for a few days, and I have some AMAZING guest bloggers lined up for you while I’m gone! Help me show them lots of love from Love Grows Wild : )
First up is my sweet friend, Lyuba, from Will Cook For Smiles. She’s an amazingly talented food blogger, and I know you’ll love her!

It’s Springtime! Are you guys happy that spring is here? I know I am and it looks like Liz is too. She has been sharing some great spring themed projects. What’s your favorite? Mine is the Stacked Egg Floral Arrangement. I am sharing something light and springy too. Tomato Basil Couscous Salad is great for a spring and summer meal, it’s light and fresh!

But, how rude of me, let me introduce myself! I’m Lyuba from Will Cook For Smiles. I share many different recipes on my blog, including sweets, savory dishes and drinks. Cooking is my hobby and my passion, it brings me a lot of joy to share my culinary adventures with all of you. Hop over to my blog when you are done here, or check out my Facebook, Pinterest and Twitter!

I love spring! I know, I already said that…but I do. I live in FL right now so it doesn’t make too much difference, other than insane amount of pollen and allergies. I remember spring from living up north and it was wonderful. Those first flowers breaking through the snow! Love it, love the flowers.
I also love fresh herbs. I already planted my herb garden and I can’t wait to harvest my first crop of basil. Nothing beats herbs fresh from the garden! Although, until my herbs are ready, I must settle for buying them. I got some nice basil at the farmer’s market along with some gorgeous tomatoes. Here is what I made with it:

Tomato Basil Couscous Salad

Ingredients:
2 cups of cooked pearl couscous
2 medium Roma tomatoes
2 tbs chopped fresh Basil
1 tbs grape seed oil
2 tsp lemon juice
1 tsp Balsamic vinegar

Directions:
~Just combine all the ingredients in a mixing bowl and mix well until combined!
**For best results, refrigerate for a couple of hours so that the flavors set in.
Enjoy!

Doesn’t that salad look amazing? It is definitely going on my to-do list this summer! Thanks so much to Lyuba for sharing this wonderful recipe and hanging out at Love Grows Wild while I’m gone! {HUGS}

I love to use Israeli couscous. Yours looks so light and flavorful. I saw it on Six Sisters. Great dish!

Ah, looks so GOOD! I am gluten free but I could see using quinoa in place of the couscous. Happy Thursday from the enchanted oven,
