Chipotle Lime Corn on the Cob

Fresh sweet corn is one of the great joys of Summertime, and I love finding new ways to prepare it! This Chipotle Lime Corn on the Cob is so flavorful and is super easy to make. I roasted the ears of corn in the oven, which makes the kernels nice and juicy and slather them with a spicy chipotle lime sauce that is out-of-this-world delicious. Add some grated cheese and fresh cilantro, and you have the perfect Summer side dish!
