Egg salad is one of my favorite lunch options, especially in the Summer when it’s too hot to turn on the oven. It’s quick, easy, and I always have the ingredients on hand. I discovered a new twist on this classic salad by adding the fresh herby flavor of pesto! Just a few teaspoons adds the perfect amount of zing to really jazz up the usual recipe. Pesto Egg Salad Sandwiches have become a staple of my lunch menu, and I know it will be for you too!
