Fajita-Style Quesadillas

Quesadillas are always a big hit in our house, and I love coming up with new ways to enjoy them. These Fajita-Style Quesadillas are not only delicious and bursting with flavor, but easy to make and easy on the wallet too! You can have a meal on the table that the whole family will enjoy in 20 minutes!
Love Grows Wild | Fajita-Style Quesadillas - a fast and budget-friendly meal that is sure to be a crowd-pleaser!

These Fajita-Style Quesadillas start with colorful green and red peppers and some onion sliced thin and  cooked for just a few minutes until tender but still crisp. Then I layer a tortilla, Monterey Jack cheese, veggies, MORE cheese, and another tortilla and cook the quesadilla until the outside is browned and crispy and the cheese is perfectly melted. I like to add fun garnishes and toppings like cilantro, lime wedges, guacamole, and sour cream, but you can add whatever you like! And if you’re craving some meat and veggies alone won’t cut it, go ahead and add some thinly sliced cooked chicken or beef to your quesadilla. That’s the way my husband likes them! Meals like this are great because you can customize everyone’s plate the way they like. That way everyone is happy! However you make it, I know you will LOVE this recipe!

    I really appreciate your site, your recipes, and your whole concept. You fit our Arizona lifestyle just fine, thanks! I used this recipe with goat cheese too. If you monitor it carefully while on the griddle, it will turn out really tasty and fun to eat. Your husband is right. I fry chicken fingers, dipped in corn starch and onion powder before frying, then they are sliced thin after cooking to insert them in the quesadilla with the veggies. Bravo! Adelante, mi Amiga.
