Whole Wheat Lemon Poppyseed Bread with chia seeds

- 2 cups of white whole wheat flour
- ½ cup of natural cane sugar
- ½ teaspoon of baking soda
- 1½ tablespoons of poppyseed
- 1 teaspoon of chia seed
- ¾ cup of coconut oil, melted
- 1 cup of vanilla greek yogurt
- 1 tablespoon of vanilla extract
- ¼ teaspoon of salt
- 2 eggs
- 1 teaspoon of lemon zest
- 4 tablespoons of lemon juice
- Preheat oven to 375º.
- Grease a loaf pan with coconut oil.
- In a large bowl mix, white whole wheat flour, natural cane sugar, baking soda, lemon zest, salt, poppyseeds, and chia seeds. Whisk together.
- In a small bowl mix melted coconut oil, vanilla greek yogurt, vanilla extract, fresh lemon juice, and eggs. Whisk together.
- Add wet ingredients to dry ingredients and mix until just combined.
- Add batter to prepared loaf pan.
- Bake for 40 minutes or until toothpick comes out clean.
