A sweet, chewy sugar cookie with creamy salted caramel in the center
Author:
Recipe type: Dessert
INGREDIENTS
  • 1 package sugar cookie baking mix (I used Betty Crocker)
  • ¼ cup all-purpose flour
  • 11 ounce bag caramel (I used Kraft baking bits)
  • 2 tablespoons heavy whipping cream
  • 1 teaspoon coarse sea salt (I used Morton)
INSTRUCTIONS
  1. Heat oven to 350ºF. Prepare the sugar cookie mix according to package directions + ¼ cup all-purpose flour in a large bowl until well combined. Shape the dough into 1-inch balls and place 2-inches apart on an ungreased cookie sheet.
  2. Bake for 11-13 minutes or until the edges are set, and allow to cool for 2 minutes. Using the back of a round metal teaspoon, make an indentation in the center of each cookie. Transfer the cookies to a wire rack to finish cooling at least 30 minutes.
  3. Meanwhile, in a small microwaveable bowl, heat the caramel and heavy whipping cream in a microwave on high for 1-2 minutes, stirring after the first minute, until the caramel is melted and smooth. Spoon about half a teaspoon of caramel into the center of each cookie and sprinkle with coarse salt. Let stand for about 10 minutes until the caramel is set.
