INGREDIENTS
  • For the cookie:
  • 1 cup unsalted butter, room temperature
  • 1¼ cup granulated sugar
  • 1 large egg
  • 1½ teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 3 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • For the frosting:
  • ½ cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
INSTRUCTIONS
  1. To make the sugar cookie bars: Preheat oven to 350ºF. Line a 13x9-inch baking dish with foil and spray lightly with nonstick cooking spray.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 2 minutes. Add in the egg, vanilla extract and almond extract and mix until combined.
  3. In a separate bowl, combine the flour, baking powder, and salt. Make sure to spoon the flour into your measuring cup and level it off with a knife to ensure accurate measurements. Slowly add the flour mixture to the butter mixture and mix until just combined.
  4. Press the dough into the prepared dish in a smooth, even layer. Bake for 18-22 minutes until the edges are slightly golden and the center is just barely set. Cool completely on a wire rack.
  5. To make the frosting: In a large bowl, beat the butter for 2 minutes until light and fluffy. Add the remaining ingredients and mix for additional 3 minutes. If the frosting is too thick, add a little more milk. If the frosting is too thin, add a bit more powdered sugar. Spread the frosting in an even layer over the sugar cookie bars, then cut into squares and serve.
