Did you read that title? Cappuccino and Chocolate Cupcakes! Two of my favorite things in the whole wide world combined into one awesome cupcake! I’ve enjoyed fruit-inspired desserts all Summer long, like my Banana Cream Pudding Parfaits, Skinny Banana Pineapple Ice, and Homemade Roasted Strawberry Topping, but now I’m ready to dive into the dark side of decadent chocolate desserts! YUM!
I live for my coffee every morning, and sometimes I go to bed just so I can wake up and drink my coffee again, so these mini cakes made me very happy! (Hello. My name is Liz, and I’m a coffee addict.) A little bit of instant coffee dissolved in water turns a regular box cake mix into a delicious cappuccino cake! And chunks of semi-sweet chocolate sprinkled throughout the cake batter really turn this dessert into something special! The coffee and chocolate flavors compliment each other so well, and make this the perfect sweet treat to enjoy with your afternoon cup of joe! All you need is a dollop of glossy, white homemade frosting on top and some extra grated chocolate to make this treat complete!
